No Boil Lasagna with Fresh Baby Spinach
Lasagna is one of my favorite comfort foods. Thanks to my friend Emily, its gotten a little better & healthier. She suggested adding fresh baby spinach to my lasagna and I'm glad I did. It was amazing. I thought it would be weird because I usually use sauteed spinach and the texture would be different, but it wasn't.
This recipe is lower fat than a traditional lasagna recipe, but it's packed with flavor. Try it, you won't be disappointed!

Cheddar Onion Pierogi
Pierogi are one of my family's favorite side-dishes. My Uncle Joe has been making them for holidays for as long as I can remember. He lives in Florida, so when he isn't in town, it's up to us to carry on the family tradition. I made these for Christmas Eve dinner this year and they were so delicious that Clinton and I decided to make another batch using the leftover potato from the Christmas Eve pierogi dish. It was great having him help this time because I do not own a pasta machine, which makes rolling out the dough cumbersome. Clinton put a little muscle into it and the dough was perfect!
You can use any mashed potato filling you'd like. I prefer my cheddar onion mashed potatoes in mine. This recipe will make approximately 75 pierogi. Here is the recipe...

Tortellini Skewer Appetizer
One of my favorite appetizer served at my sister's shower were the cheese tortellini skewers. I saw a picture of these on Pinterest a few weeks ago and instantly put it on my menu. They made a great presentation and was something different than I've ever done. Since the picture on Pinterest was just linked to a picture board, I had to figure out the best way to prepare and serve these. It took a little guesswork, but it turned out great.

Slow cooker Pasta Sauce
This is an easy sauce that cooks all day in your slow cooker. When I make sauce, I make it to last for several meals so this recipe makes a lot. It takes up every inch of my 6 QT slow cooker. If you have a smaller slow cooker, just reduce the amount of tomato sauce you add.

Baked Rigatoni Pie
This is an adaptation of a Martha Stewart recipe. The second I saw it on Pinterest, I knew I needed to make it. It takes a little time to put it all together, but it's worth it. A great twist for your boring pasta dinner!
