Cheddar Mashed Potatoes

On Saturday, I was in a Donna Reed mood, so I made homemade meat loaf and mashed potatoes.  The husband was in heaven and the kids cleaned their plates before I had a chance to start mine.

I make real mashed potatoes about once a year, when I feel ambitious.Its such a long process, but they are worth every minute. This recipe is actually my pierogi filling recipe. Its so good that you can eat it as a side.

Here is my self-nominating "best potato recipe of the year" cheddar mashed potato recipe. Hope you enjoy!

Cheddar Mashed Potatoes

2-3 lbs russet potatoes
3/4 C  plus 1 tbsp butter
1 small onion- finely diced
1 C shredded cheddar cheese- Sargento 4 state cheddar is awesome in this

Add an inch of water to a large stock pot. Add salt if desired and place lid on pan. Heat to boiling.

Meanwhile, peel, wash and chop potatoes into 1 inch pieces. Once water is boiling, place potatoes in the pot with the lid on. Cook for 20-25 minutes until potatoes are tender.

Saute onion in 1 tbsp butter until golden brown. Melt remaining butter in a separate pan or in the microwave. When potatoes are done, drain and add to a stand mixer.

Add melted butter and onion to the potatoes and whip with a paddle attachment or with a hand mixer until fluffy. Add cheese and whip for about 30 seconds.
