I think I look forward to certain times of the year solely because of the seasonal coffee drinks from Starbucks and Caribou. In the summer, I love iced carmel frappuccino...especially the once in a blue moon that I allow myself to order it full-fat, the way it's meant to be enjoyed. Pumpkin lattes mean fall is coming. And my favorite of all- peppermint mocha's! That means Christmas.
I picked up some peppermint mini marshmallows at the store a few weeks ago, just because. And today, I decided to make one of my favorite desserts, Rice Krispie Treats, with a coffee twist. Here is my recipe...
Peppermint Mocha Rice Krispie Treats
3 Tbsp butter
1/2 packet mocha Starbucks Via (you could use any instant coffee... I really like the strong taste of Via)
4 C peppermint mini marshmallows
6 Cups Cocoa Rice Krispies
Melt butter on low heat. once butter is almost melted, sprinkle in the instant coffee. Stir until butter is melted. Add marshmallows. Stir until completely melted. Take off heat.
Add Rice Krispies and stir until thoroughly coated. Transfer to a 9x13 dish coated in butter or cooking spray. put a little butter or cooking spray on wax paper and press flat into the pan. Let set for 1 hour.
