Pumpkin Stuffed French Toast

Fall is here! This weekend was beautiful in Chicago. Afternoon temps in the low 70's and the evenings chilly enough to wear a sweatshirt and be comfortable. I LOVED it!

Fall is my favorite time of year (aside from Christmas). I love the cool temps, gorgeous fall colors, wearing sweaters and the food- pumpkin lattes, pumpkin crisp, crock pot stews, etc. I was in the mood for some stuffed french toast this morning and it was awesome! I've never made pumpkin stuffed french toast, so I modified my blueberry french toast by adding a little brown sugar and pumpkin pie spice.

This makes four pieces, but since it was just me, I only made two and used the remaining batter for regular pumpkin french toast for the girls. It was wonderful...Hope you enjoy it!

Pecan Pancakes- Perfect for fall!

We've been experiencing fall-like weather here in Chicago, which has been a welcome change to the scorching summer we've had that started in March. Even the leaves have begun to fall! These cool mornings have me dreaming of pumpkin farms, Halloween decorations and sweaters. In celebration of this, I made pecan pancakes this morning- which is one of my favorite fall comfort foods.

I crave Cracker Barrel's pecan pancakes. They are so delicious that I won't order them at any other restaurant because I know I'd just be disappointed. A few years ago, I started to try and duplicate the recipe and I think I've come pretty close. I do use a "just add water" pancake mix, which makes them quick and easy to make.

These were amazingly good this morning, and not at all healthy...so, sorry my fellow weight watchers, but they're worth it!

Lemon Blueberry Streusel Muffin Tops

When I was in college, Clinton used to beg me to make him struesel muffins from a box that was sold at my local Walmart. They were really good. Lately, I've been craving these muffins, so I decided to try to replicate it. These are great! I adapted the recipe from Barbara Bakes.

Better than McDonalds 3 minute Breakfast Sandwich!

I saw something similar to this on Pinterest a few months ago and thought with a few changes, it would be perfect.  Was I right! I didn't expect this breakfast sandwich to be nearly as good as it was. Best part is that after a little advanced prep, it only took me 3 minutes to make it this morning and it was a healthy breakfast for around 300 calories. If you do it with Egg Beaters, its even less!

Pinkalicious Strawberry Pancakes







Have you been introduced to Pinkalicious yet? Elsie has requested to read this book every night since I first read it to her two months ago. She loves it. We're at the point that I will start a sentence and she will finish it. She even sleeps with it at night. I need to find her a Pinkalicious doll as I'm sure the book isn't the most comfortable thing to sleep with.

So, we woke up the other morning and I decided to make her Pinkalicious Pancakes. She was so excited! And considering I've never made strawberry pancakes, I whipped up a fantastic recipe. The entire house smelled like strawberry shortcake. They were a hit. I don't think one made it to the freezer!

Easy Cinnamon French Toast


I'm not going to pretend that today's blog post is a genius gourmet recipe...but its really good and a super easy way to wow breakfast guests. Cinnamon French Toast is one of my favorite things to order when we go out for breakfast. The biggest ah-ha moment of my life was when I realized that it's just french toast made of cinnamon bread. Homeade Poptarts



I love Pop Tarts...I rarely buy them because they're not diet friendly, but the couple times a year I do buy them, I cherish every bite. When I came across this recipe, I knew it had to be on the menu for Evelyn's breakfast birthday party. And the were a hit. I used my William Sonoma sandwich maker and it worked perfectly as a little pie maker...plus it made them adorable!

PB & J smoothie

This smoothie is packed with nutrition and taste great. This recipe uses the Smoothie To Go Pack, but you can just add frozen fruit, baby spinach and a 1/4 C greek yogurt to get the same results. The peanut butter and greek yogurt add protein that help you feel fuller longer. Best of all, these calculate to only 4 WW Plus Points! And they're huge!

Best Iced Coffee Tip














Love Iced Coffee in the summer like I do? Make a pot of coffee and freeze it in ice cube trays. This way, your coffee isn't watered down. I do add some regular ice cubes to my iced coffee, otherwise, I get a little wired. Its all to your personal liking!

Best Bacon EVER

My sister told me about this new way to cook bacon. She said it was the best bacon she'd ever made. So, I did it this morning and I will never make bacon on the stovetop again! It was crazy easy, little mess and it turned out perfectly!

Happy birthday to my baby, Evelyn. She is one year old today. I can't believe she is already one year. I feel that the last year has flown by, but I suppose that's partly because she is a second child and I haven't devoted my undivided attention to her like I did Elsie.

7 Days of Pumpkin Day 6- Pumpkin French Toast


The French Toast was a hit in our house, as you can see by the little vultures surrounding Dad below.  They couldn't get enough. I always make extra so that I have an easy breakfast in the freezer for the kids, but that wasn't happening this morning! I went through an entire loaf of bread and they still wanted more!

These pumpkin pancakes were a hit on Sunday morning breakfast. My step-son Logan, who complained about having pancakes, came back for seconds and thirds and Elsie had four pancakes even though she had just had a big bowl of cereal.  This is a big recipe because I like to make extras to freeze for an easy weekday breakfast.
