Here is another awesome healthy slow cooker recipe. This is easy and quick to prepare and tastes great! I add the chicken frozen, so no need to thaw your chicken if it's frozen.
Serve with cheese and Frito's or tortilla chips. Frito's scoops are my fave and I figure since it's such a low calorie dinner, I can splurge a little on a few Frito's.
Chicken Tortilla Soup
1 lb chicken breasts
2 cans black beans
2 cans diced tomatoes- one with green chilies
1 15oz can tomato sauce
1 15oz jar salsa
1 15oz can corn- drained
1 15oz can chicken broth (you can add more if you like it to be soupier)
cilantro to taste
Place raw chicken into slow cooker. Add remaining ingredients except cilantro. Cook 8 hours on low. After 8 hours, shred chicken and add cilantro.
