Five Point Lasagna Soup

Its my mission to find easy, healthy dinners that taste great. This is one of them. I thought it tasted great last night, but for lunch today it was even better.  This recipe is modified from the the deen brother's website. It's a hearty soup that's also healthy. The recipe is 5 Weight Watcher's points for a one cup serving. This soup is a little time consuming, but its definitely worth the wait. Enjoy!



Lasagna Soup
1 lb 93% lean ground beef
1 onion, chopped
3 cloves garlic, chopped
2 32 oz containers fat free chicken broth
2 15 oz cans tomato sauce
2 14 oz cans petite diced tomatoes
1/2 tsp salt
1/2 tsp crushed red pepper
6 broken lasagna noodles
1/4C fresh basil
6 tbsp Parmesan cheese
1 C reduced fat mozzarella cheese

Brown ground beef in a stock pot. Add garlic and onion and cook until garlic is golden and onion is translucent. Add broth, tomato sauce, diced tomatoes, salt and crushed red pepper. Bring to a boil . Reduce heat and simmer for 20 minutes.

Add noodles, bring to a boil, reduce heat and simmer until noodles are cooked- about 10 minutes. Remove from heat and stir in mozzarella, basil and parm.

Makes 15 Cups.
