Rollo Cupcakes

What could be better than a chocolate cupcake stuffed with caramel and topped with a delicious buttercream frosting with caramel drizzled on top? Nothing I can think of!

This is a great recipe and an easy way to dress up a cake mix cupcake. Inspired by one of my favorite candies- Rollos, this recipe combines chocolate and caramel that you can taste in every bite.

Rollo Cupcake

1 chocolate cake mix + all the necessary ingredients
1/2 C mini chocolate chips
24 rollos
Hot Fudge
Caramel Sauce (squeeze bottle is best)

Preheat oven to 350.

Prepare cake mix as directed on package. I recommend substituting melted butter for the oil- creates moist cupcakes. Mix in mini chocolate chips.

Fill cupcake liners 2/3 full with batter. Place in oven for 5 minutes. Take out and quickly place rolos in the center of the cupcakes.  Bake 15-18 minutes. Let cool.

Take out the center of the cupcake with a cupcake corer or just cut out a 1/2 inch circle in the top of the cupcake. Fill with hot fudge and caramel. 


Prepare butter cream frosting and pipe on cupcake. Drizzle caramel on top. Enjoy!
