Stuffed Jalapeno Panini


One of my favorite appetizers is stuffed jalapenos. I haven't had them in a long time and when I saw this pin, it made me drool. So... I looked at the recipe and figured out how to make it mine with a few little tweaks. Either recipe you go with, is sure to be a hit!

Here is the recipe...
Stuffed Jalapeno Panini

4 pieces of crusty bread
butter
1 jalapeno-finely diced
2 tbsp cream cheese
1 tbsp shredded cheddar cheese
2 slices of bacon
2 slices of Sargento Mozzarella- Cheddar cheese
7-8 tortilla chips- depending on the size of your sandwich

Butter one side of each piece of bread. In a small bowl, combine diced jalapenos, cream cheese and shredded cheddar cheese. Spread cream cheese mixture on two slices of bread, top with one slice of cheese. Place one slice of cheese on the other two slices and top with bacon and tortilla chips. Place the cream cheese bread onto the slice with bacon on a griddle pan. Cook for 3-4 minutes on one side with a pan lid over the sandwiches to ensure the middle cooks through. Flip and cook for about 2 minutes on opposite side.



Enjoy with your favorite bowl of soup.
