These pumpkin pancakes were a hit on Sunday morning breakfast. My step-son Logan, who complained about having pancakes, came back for seconds and thirds and Elsie had four pancakes even though she had just had a big bowl of cereal. This is a big recipe because I like to make extras to freeze for an easy weekday breakfast.
Easy Pumpkin Pancakes
3 Cups Just Add Water Pancake Mix (I used Hungry Jack Light & Fluffy)
2 Cups Water
2 Tsp Pumpkin Pie Spice
1Tsp Cinnamon
2 Tbsp Brown Sugar
1/2 Cup Pumpkin Puree
1/4 Cup White Sugar
Whisk all ingredients together. Batter will be thick. Pour into desired pancake size on a griddle set at 375 degrees. Flip when edges are firm. Enjoy!
