Boston Cream Cupcakes

This recipe is from my friend Lee. She was trying to clean out her pantry/fridge of open items, so she came up with this fabulous recipe. Her ability to create amazing dishes out of random pantry items never ceases to amaze me. Plus...who doesn't love Boston Cream cupcakes... fluffy cake filled with vanilla pudding and covered in chocolate.  Is your mouth watering, yet?

Boston Cream Cupcakes

1 yellow cake mix + ingredients needs to prepare it
4 serving size vanilla pudding
2 cups milk
1 1/2 C semi-sweet chocolate chips
4 tbsp butter
3-4 tsp sugar
3-4 tbsp milk
1 1/2 tsp vanilla

Prepare and bake yellow cupcakes. Once cool, core the top-center of the cupcakes.

Prepare pudding according to box directions. Once set, fill center of cupcakes.

Microwave chocolate chips and butter in a microwave safe bowl until butter is melted- about 45 seconds at 50% power. Stir. Add milk, sugar and vanilla. Stir until creamy. Add milk if the mixture is lumpy. You may need to microwave for 10 additional seconds.

Top cupcakes with the chocolate. I poured the chocolate with a spoon and spread it around the cupcake. 

Chill in the refrigerator for about 2 hours. Enjoy!
